Smoked Salmon Runbook v2.0

Derrick’s Hybrid Super Smoke Method

Objective

Produce moist, flavorful smoked salmon with noticeable smoke flavor, bright lemon notes, and a lightly firmed exterior using a Traeger smoker and butcher paper boat.

Target Internal Temp: 135-140°F

Total Cook Time: ~2 to 2.5 hours

Pellets: B&B Championship Blend

Phase 1 - Preparation

Prep Salmon

Prepare Lemon


Phase 2 - Build Butcher Paper Boat

Purpose

Creates a moisture-retaining cooking vessel while allowing smoke exposure.

Method

  1. Tear off large sheet of butcher paper
  2. Fold edges upward creating shallow tray
  3. Place several lemon slices underneath salmon
  4. Place salmon skin-side down
  5. Add remaining lemon slices on top
  6. Fold sides slightly upward

Do NOT seal.

Open top.

Open ends.

Smoke can still circulate.


Phase 3 - Smoke Session
